Recipe - A bowl of Tasty noodles (from The Campervan Cookbook, page 111)

This is a kind of mock Pad Thai. It's pretty versatile - try replacing the prawns with cooked chicken or duck or leaving them out completely if you are a vegetarian. Sugar snaps can be replaced with green beans or asparagus, cut into short lengths. A good trick to avoid fiddly peanut chopping is to put the peanuts into a poly bag, cover with a tea towel, and bash with a clean round rock.

For 2

150g thin dried rice noodles

oil

1 clove garlic, crushed

small knob root ginger, peeled and shredded

2 carrots, peeled and cut into thin batons

2 handfuls sugar snap peas, halved lengthways

2 tabs sesame seeds

1 egg lightly beaten

2 handfuls small peeled cooked prawns

1 tab sweet chilli sauce

1 tab soy sauce

handful roughly chopped coriander or mix of coriander and mint

2 tabs unsalted roasted peanuts, chopped

Soak the noodles according to the packet instructions, and drain. Heat s splash of oils in a frying pan, and when really hot add the ginger and garlic and stir fry for 30 seconds. Stir in the carrots and sugar snaps, reduce the heat to medium and stir fry for 3-4 minutes until beginning to soften.

Stir in the sesame seeds, then push everything to one side of the pan and tip in the egg. As the egg begins to set move it around to scramble and then quickly mix with the veg in the pan and add the other ingredients. Toss all together, and serve, sprinkled with the crushed peanuts. :)

 

Shopping tip - Don't try to shop too much in advance. Make the most of local produce available wherever you stop and create a meal around that!

Recipe - A great one pot meal, ideal for sitting around with as the evening starts to cool down! This is so easy to make, and tastes really great!

 

“Camperstrone” – more of a stew than a soup! This recipe is now featured in the Cool Camping Cookbook from Punk Publishing, page 33! (Proud!)

 

Ingredients - for 4

 

A chorizo sausage, chopped up (approx 200g)

300ml jar  of any tomatoey pasta sauce – we like a spicy one

A 400g can of chick peas or other beans

750ml chicken stock

500g of pasta tubes – or any other chunky pasta

 

In a large pan, fry the chorizo until the fat runs and it starts to crisp up a little. Drain off some of the excess fat, then add the pasta sauce, chick peas, pasta and stock. Bring to the boil, then reduce heat and simmer for 12 to 15 minute until the pasta is cooked to your liking. Keep an eye on it  and add a little extra water if necessary during cooking.

 

Serve with crusty bread, and maybe some grated cheese.

 

For a veggie version, omit the chorizo, add an extra can of different beans, use veg stock, and definitely serve with cheese!

A Hudson family favourite Eggy Pasta

Cook enough pasta for your party, and one egg per person. Grate some nice strong cheddar cheese, chop up the eggs and mix all together with butter. Serve with ketchup and french bread and more butter.Worry about arteries!
